This is a really simple Pita Bread recipe, for baking in an oven or on the grill. Slightly sweet and great freshly made.

Ingredients
- 3 cups flour
- 1 1/2 tsp kosher salt
- 1 tbsp sugar
- 2 tsp yeast
- 1 1/4 cup water
- 2 tbsp olive oil

Instructions
- Mix yeast with flour, salt, and sugar.
- Add olive oil and water to flour, combining into a ball.
- Knead for ~10 minutes, or until smooth.
- Place dough ball in oiled bowl and rise covered with a damp towel, for ~90 minutes or doubled in size.
- Punch down the dough and divide into 8 balls. Let rest for 20 minutes.
- Roll out each ball to ~1/8 inch thick. If it doesn't stretch well, let rest some more.
- Bake at 400 degrees F for ~3 minutes (total).
Notes
Slightly more salt and sugar works well.
On the grill, medium high worked well, flipping after 2-ish minutes.
