This is a really simple Pita Bread recipe, for baking in an oven or on the grill. Slightly sweet and great freshly made.

Instructions

  1. Mix yeast with flour, salt, and sugar.
  2. Add olive oil and water to flour, combining into a ball.
  3. Knead for ~10 minutes, or until smooth.
  4. Place dough ball in oiled bowl and rise covered with a damp towel, for ~90 minutes or doubled in size.
  5. Punch down the dough and divide into 8 balls. Let rest for 20 minutes.
  6. Roll out each ball to ~1/8 inch thick. If it doesn't stretch well, let rest some more.
  7. Bake at 400 degrees F for ~3 minutes (total).

Notes

Slightly more salt and sugar works well. On the grill, medium high worked well, flipping after 2-ish minutes.
