This is a really quick and simple seared chicken breast recipe. Goes great with a salad!

Ingredients
Spice amount is approximate
- 2 chicken breasts
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp chili powder
- 1/2 tsp kosher salt
- 1/2 tsp pepper
- dash of cayenne pepper
- olive oil
Hardware
- cast iron skillet
- aluminum foil
Instructions
- Mix the spices, salt and pepper in a small bowl.
- Butterfly each chicken breast so it has an even thickness.
- Sprinkle the spice mixture on both sides of each chicken breast.
- Let sit for a few minutes. Meanwhile, heat up the skillet on high until really hot.
- Coat chicken breasts with a thin layer of olive oil. Sear each side of the chicken breast for 1 minute. Remove and place in an aluminum foil pouch; seal tightly.
- Let sit for 5 minutes. Cut into strips and serve.
Notes
Adjust the spice mix for your tastes. I like to increase the amount of cumin and chili powder for tacos. For a chicken salad, reduce the chili powder and increase the garlic powder. Experiment!
As an alternative to an aluminum foil pouch, you can leave the chicken in the skillet. Just remove the skillet from heat, and cover.
